Vineyards
Growing area: Piemonte, in the province of Asti.
Location: nearby the Moscato d’Asti production zone.
Age: 10–30 years.
Soils: medium texture with layers of sand, clay and gray fragmented tuff tending to calcareous.
Varieties and growing practices
Grapes: 100% Moscato.
Training system: VSP trellised, guyot and double guyot.
Vineyard density: 2500-3500 vines per hectare.
Yield: 12 t. of grapes/ha.
Vinification and maturation
Harvest: early picking of the grapes with sugar and acidity levels suitable for the base wine.
Vinification: gentle pressing, temperature controlled fermentation, then second fermentation of the base wine, with cultured yeasts, in steel pressure fermenters to develop effervescence.
Maturation: the wine matures in air conditioned warehouse.
Tasting notes
Appearance: pale straw-yellow, fine and persistent perlage.
Bouquet: intense and varietal with scent of yellow fruit, orange blossom and rose.
Palate: fresh with a pleasant sweet persistence
Alcohol
6,50% vol.
Cellaring
A wine with a very rich and typical bouquet, which will be at its best if enjoyed while still youthful but that can be appreciated even afterwards.
Serving suggestions
Very good with dessert, especially to all kind of dry pastries, cakes, tarts and fruit salads. Also try with traditional pandoro and panettone
