Vineyards
Growing area: Sicily
Location: all the vineyards are in the Valley of the Temples and surrounding areas, in the province of Agrigento.
Age: 4-30 years.
Soils: clay and limestone soil of alluvial sea origin.
Aspect and elevation: north-east, south, north-west at 150-400 m.
Varieties and growing practices
Grapes: 100% Nero d’Avola.
Training system: spurred cordon, tendone, guyot and bushtrained.
Vineyard density: 2000-5000 vines per hectare.
Yield: 11-12 t. of grape.
Vinification
Harvest: by hand and by machine.
Vinification: maceration on the skins for 15/20 days, fermentation with selected yeasts at controlled temperature. Malolactic fermentation at the end of alcoholic fermentation.
Maturation: in French oak barrels for 5 months, then in bottles in temperature controlled storage.
Tasting notes
Appearance: ruby red colour with violet overtones.
Bouquet: intense and characteristic bouquet typical of the grape, with scents of red berry fruits, blackberry, myrtle, light liquorice and spices.
Palate: harmonious with smooth tannins, sapidity and freshness well balanced.
Alcohol
13,50% vol.
Cellaring
Great to drink now but can be kept for 2/3 years after harvesting.
Serving suggestions
Salami, pasta al ragù (pasta with meat sauce). Excellent with white and red meat.
Serving temperature
18-20° C.
